To keep you going until then, here are some of Erini’s recipes from the past:

 

 

 

 

Dolmades alla Avo

Ingredients:

  • 6 large lettuce leaves OR 6 vine leaves
  • 1 obedient avocado (check for stubbornness before using)
  • 1 tomato chopped into little pieces
  • small bunch fresh coriander
  • ¼ onion chopped finely
  • garlic (optional) chopped finely
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • dash of paprika
  • dash of herbal/sea/Himalayan salt (kelp is excellent salt substitute)

Method:

 

Place the lettuce or vine leaves flat on plate.

 

Mash the avocado with a fork then add the tomatoes, onions, coriander, garlic, lemon juice, olive oil and season to taste.

 

Take the lettuce or vine leaf and place keep it on a flat plate. If you are using vine leaves, the stork side should be close and facing you.

 

Place a tablespoon of the mixture in the middle of the leaf. From the bottom near you, fold it over the mixture once followed.

 

Next, fold the sides in before rolling up the rest, pressing firmly and keeping the filling in place.

 

Enjoy immediately.

 

 

 

 

 

 

 

 

 

 

Colourful Courgette Rolls (Zucchini)

Ingredients:


1 large courgette

1/2 yellow pepper

1/4 onion

1/3 cup cashews

1 tablespoon spring onions

1 tablespoon olive oil

1 teaspoon cumin


Method:

 

Using a peeler, peel the zucchini into long strips

Lay them on a plate and coat them in all the olive oil

Next, take the cashews and mix them up in a blender. Add a little water until it becomes creamy.

Add the cumin to the cashews and set aside.

Cut the onions and pepper into long strips.

To assemble everything, take the long courgette pieces and lay them horizontally onto plate.

Spread the cashew/cumin cream onto each courgette.

Sprinkle the spring onions onto each slice.

Place 4-5 onion and pepper strips vertically onto the courgette and roll it up.

Serve with a lovely raw salad like rocket and tomato.


Suggestion: you can make this with peeled beetroot too. Follow the same steps but use beetroot instead of courgette.

 

 



Raw Flat Bread

If like me you like bread but it makes you bloated and in stomach pain, then this is a wonderful alternative!


Ingredients


1 cup buckwheat soaked for at least one hour

1/2 cup sunflower seeds

1/2 cup flax seeds ground

1/4 onion chopped into pieces

2 tablespoons olive oil

1 small bunch of parsley or coriander chopped

dash salt/pepper/paprika


Method

 

Mix the buckwheat, sunflower seeds and flax in a food processor with the olive oil. If your processor is small, you may have to divide and do this twice.

Process well until it looks like dough.

Place in a large bowl and add the rest of the ingredients, stirring well.

Flatten onto a dehydrator tray and dehydrate for 2 hous either side at 48 degrees OR

flatten in a baking tray and heat in the oven at 48 degrees for half an hour.

Cut into squares and enjoy with raw dips and salads.

 

 

 

 

Chocolate-Velvet Truffles

 

Ingredients

2 tablespoons raw cacao powder

2 tablespoons ground almonds
2 organic dates
1 tablespoon honey (preferably raw)
1 tablespoon organic coconut oil
1 teaspoon ground cinnamon OR 1 inch vanilla pod


Method:

In a blender, add the cacao powder, coconut oil, almonds, dates and a 2 tablespoons of water. Blend until well-combined and smooth.

Add the rest of the ingredients and blend well again. Check for taste.

 

Using your hands, roll the mixture into little balls.

Refrigerate for at least half an hour.

 

 

Carob Energy Shake

 

For me, Carob is the Mediterranean's most underestimated food - so many nutrients can be found in it, especially calcium and vitamin A. Carob powder is fantastic to make a 'frappe' with but here is another richer, shake that is perfect for mid -morning or mid-afternoon when our energies can get a little low.

Ingredients

1 tablespoon carob powder
1banana
2 fresh figs (or one dried fig)
dash of cinnamon

 

Method:


In a blender, add all the ingredients and blend very well.

Pour in a tall glass and add some ice cubes if you like it chilled.

Luxuriate.
